with lime, chilli, mint & vegan feta
A quick and easy lunch or snack to rustle up; protein-packed peas and creamy avocado smashed together with zesty lime, a kick of chilli heat, fragrant mint and tangy vegan feta - the perfect spread for crusty bread or crispy crackers...

INGREDIENTS
1 cup frozen peas
1 ripe avocado
1 red chilli, deseeded and finely minced
1 small handful fresh mint, chopped
Zest and juice of 1 lime or 1/2 lemon
Salt & pepper
Crusty bread, to serve
TO GARNISH
Vegan feta cheese
Extra mint leaves and red chilli

METHOD
1. Add the frozen peas to a pan of boiling water and cook through for 3-4 minutes. Then drain and leave to cool for a few minutes.
2. Once cool, place the peas in a mixing bowl then using a fork or potato masher, roughly mash them up. Cut the avocado into cubes then add that into the bowl along with the chilli, mint, the zest and juice of lime or lemon, and season with salt and black pepper. Using a fork, turn it over a couple of times in the bowl to combine it well.
3. Spread the Pea & Avocado Smash onto crusty bread or crispy crackers, use in a sandwich or even as a dip for chips or crudités.
