Crisp cucumber, juicy baby plum tomatoes, pickled red onion and a kick of green chilli in a zesty, lightly-spiced dressing makes for this fresh and crunchy simple side salad which beautifully accompanies any kind of homemade Indian curry, such as my Creamy Tofu 'Chickn' Korma!
SERVES: 2 PEOPLE | PREP TIME: 20-25 MINUTES
INGREDIENTS
1 red onion
3 tbsp red wine vinegar
1/2 large cucumber
15 plum tomatoes
1 small green chilli
1 tbsp toasted sesame oil
Zest & juice of 1 small lime
Handful fresh coriander
1/2 tsp ground cumin
1/4 tsp cayenne pepper
1/4 tsp dried chilli flakes
1/4 tsp fine sea salt
1/2 large cucumber
15 plum tomatoes
1 small green chilli
1 tbsp toasted sesame oil
Zest & juice of 1 small lime
Handful fresh coriander
1/2 tsp ground cumin
1/4 tsp cayenne pepper
1/4 tsp dried chilli flakes
1/4 tsp fine sea salt
METHOD
1. Finely chop the red onion, then place in a shallow dish with the red wine vinegar. Toss to coat the onion well, then set aside for 20 minute for the onion to absorb the vinegar.
2. Cut the cucumber into chunky matchsticks. Slice the baby plum tomatoes in quarters length-ways, then deseed and finely slice the green chilli.
3. Place the cucumber, tomato and chilli in a bowl, then add in the sesame oil, grate in the zest of the lime then squeeze in the juice. Tear in the fresh coriander then add in the cumin, cayenne, dried chilli flakes and salt, then toss to combine.
4. Finally, add in the pickled red onion, then mix it well to combine again. Serve alongside Indian-style curries as a refreshing side dish. Enjoy!
